Dall’ultima cena del GAS erano rimasti degli albumi che navigavano in frigorifero. Una delle caratteristiche delle meringhe è che vengono meglio con gli albumi vecchi, mai capito il perché ma è vero, e poi perché sprecare dei meravigliosi albumi per fare delle dietetiche frittate senza colesterolo? Ieri ho sistemato il balcone: ho eliminato le piante morte e sistemato le rose contro il muro, mi sembra che il freddo posso rovinarle; portati dentro gli agrumi ( o meglio quel che resta di loro) e ammirato con la bocca aperta la mia salvia: mai stata così bella in tutta l'estate. che le faccia bene l'autunno? Questì si che sono buoni per  cominciare la giornata: peccato le calorie e il burro, ma meglio il burro che la margarina….

Torta fatta per splendida serata con gli amici (Ste e Francesca), ringrazio Stefano per la fotografia.
Le dosi sono per una tortiea da 26, in realtà l’ho fatta con una tortiera da crostata di 22 cm, è avanzata un po’ di pasta per fare una manciata di biscotti, e la crema viene bella alta, forse mi piace di più.

Resoconto un po' tardivo delle vacanze teresine del 2009: La signora Anna ci ha insegnato a fare gli acciuleddi:  non avevamo l'asse di legno, non avevamo la bilancia, erano finiti i limoni, il miele era poco... ma sono venuti una meraviglia: il lavoro di impaso l'ha fatto la signora Anna, ma poi a formare i serpentelli c'erano due abilissime aiutanti :  Elisa e Anna

MARMELLATA  DI LAMPONI



Le marmellate le faccio tutte nello stesso modo: seguendo le indicazioni di Patrizia e delle amiche di Altro Tempo.Ho preso i lamponi da Irene, erano perfetti ben maturi e sani.Li ho sciacquati velocemente sotto l’acqua corrente e li ho scolati, li ho pesati e messi nella pentola ( a fondo spesso) con 300 gr di zucchero per ogni kilo di frutta. Non sono proprio come i croissant francesi , ma non sono male.
Si parte dall'impasto dei  panini semidolci: qui . Per 8 cornetti servono 750 gr di impasto e 70 grammi di burro freddo.
Prendo il burro lo metto tra due fogli di carta forno e con il mattarello lo lavoro facendone un "foglio" rettangolare molto sottile,  stendo la pasta e faccio un rettangolo, su cui appoggio il foglio di burro.
